A number of carts are on the street, serving tea and coffee. The nearest cart has freshly baked bread on its roof and waits for early risers and workers. We can see a row of cups and saucers. A milk cart is alongside the cart, perhaps collecting the empty milk churns. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eWhen the city shops closed for the day, the coffee carts would come out and operate from 8pm to 8am. Unfortunately they were also a meeting place for criminals during those hours, so from October 1874 Melbourne Council restricted them from trading between midnight and 4am. This photo was captured sometime around January 1874, so this coffee cart trader has probably been there since 8pm the night before.  \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eF\u003cspan data-mce-fragment=\"1\"\u003eor 6pence, customers received a cup of coffee or tea, a saveloy, a potato and a buttered bread roll. For a few more pence, one can invest in a sheep's tongue or a slab of ham. Further up Bourke Street, on the corner of Swanston Street is another coffee cart. The licence was transferred to James Hogan in 1862, then to Joshua Roberts Mooney in 1866. In 1875 the licence was acquired by two Irish gold diggers from Dublin, cousins Henry Young and Thomas Jackson, who had been licencees of the Sparrow's Hotel in St Kilda. Fortunately for Melbourne, the Princes Bridge Hotel still stands, and since 1904 has been the home of \"Chloe\", a very famous French nude painting from 1875.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eThe large building on the left was originally built as Melbourne's Fish Market in 1865. As Melbourne grew and health regulations and traffic congestion increased, a new location for the Fish Market was built at the western end of Flinders Street, on the south-east corner of its intersection with \u003ca title=\"Link to the Spencer Street collection\" href=\"https:\/\/hotpress.com.au\/collections\/melbourne-spencer-street\"\u003eSpencer Street\u003c\/a\u003e. Construction of the building commenced in 1855, but halted in 1858 when the economy slowed and government revenue declined.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eCompletion of a redesigned building recommenced in 1873, to a new design by Kerr and two other government architects, John James Clark and Arthur Ebden Johnson. We can see in our photo that work is underway in upgrading the building.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eLooking along Flinders Street on the right, most of the buildings were either hotels, or warehouses used for customs bondage.\u003c\/span\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eAt the extreme end of Flinders Street sits what was left of Batman's Hill. Behind the hill we see the masts of many ships in the Yarra, which curves around to the left of the photo. They were high enough to keep fresh water coming downstream separate from the sea-water that came into the river from Port Phillip Bay. The local natives used this barrier for thousands of years to gather fresh water, and to capture fresh-water fish. They also used the barrier to cross the river.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eThe Falls (and the freshwater that they impeded) were noted by the first European to visit this area, namely \u003cstrong\u003eCharles Grimes\u003c\/strong\u003e, who was sent to \u003ca href=\"https:\/\/hotpress.com.au\/collections\/melbourne-maps\/products\/1803-port-phillip-survey-map-charles-grimes\" title=\"Charles Grimes Survey of Port Phillip\"\u003esurvey Port Phillip Bay in 1803\u003c\/a\u003e. Subsequently, \u003cstrong\u003eJohn Batman\u003c\/strong\u003e also encountered the Falls when exploring the area in 1835. He realised that his plan for a settlement needed fresh water, and the pool of fresh water formed by the Falls provided that essential element. However, at high tide the barrier was too low to stop the seawater from mixing with the fresh water, thereby depriving the residents of drinkable water supplies. There were a number of attempts to raise the height of the Falls to avoid the mixing of waters, but all efforts were washed away by the strong floods and tides that regularly occurred.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eThe Falls, whilst they had their use, also inhibited the passage of boats upstream and downstream past that area. At this point in the Yarra there was a naturally wide section, known as the Turning Basin, where ships could turn around to get back to the Bay. Within a few years the river bank was better defined and wooden piles were put into the river bank to support the increasing amount of trade that was coming into early Melbourne. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: #003300;\"\u003eBayliss' assistant can be seen standing on the wharf's edge. Behind him is Flinders Street, which runs along the Yarra, with the main buildings being hotels and customs storage. The wharves had been extended for a full mile to the west (as seen in the photo) and both the north and south banks were used for goods and passenger transport. The church shared the block with St Paul's School.
